Yesterday we hosted a chef’s tasting of sustainable seafood choices, courtesy of Sea 2 Table.  Based in Brooklyn, Sea 2 Table links chefs with sustainable fisheries.  Good times in the kitchen, as chefs tasted crab from Washington State, and black drum from Louisiana among others.  Guests included Stephanie Izard, hard at work on her restaurant to open in late May, and Dirk and Terry Fucik of Dirk’s Fish on North Clybourn.  Terry prepared some fish in a lovely mediterrean style– tomatoes, olives, artichokes, pine nuts…YUM, thank Terry!

Our best wishes go out to Sean Dimin and Kate Gross as they continue to educate chefs about sustainable fisheries and products.  Neil from Crop to Cup came with coffee, and that led me to another aha! moment.  What Chicago really needs is…a Chocolate and Coffee Market.  I’m thinking mid-May.
