Our construction permit is in the final stages, and could be ready Monday or Tuesday of next week. Our contractor, Chas.Bender and I had planned on a February 1st start. I expect we will actually put the shovel in the ground in about a week– perhaps February 9, 2009.

Construction is expected to last four months, then add time for inspections and we’re looking at mid-late June. Chas. Bender is a contractor that specialized in building restaurants– it’s such a blessing to have them build the Kitchen. Here, the lousy economy actually helped us, as they were too busy to bid our job last May. It’s funny how what I saw as a problem last June actually unfolded to reveal a better solution in November.

We’re so excited to see the dream become a reality– the Kitchen is absolutely the most amazing entrepreneurial adventure I can imagine.
